Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 (1-ounce) packet dry ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley or chives, chopped (optional garnish)

Instructions
 

  • Prepare the chicken: Pat chicken dry and cut into 1-inch cubes. Toss with half the ranch seasoning, garlic powder, salt, and pepper.
  • Sear the chicken: Heat olive oil in large skillet over medium-high heat. Add chicken in single layer and cook 3-4 minutes per side until golden brown. Remove and set aside.
  • Start the sauce: Reduce heat to medium-low. Add chicken broth to skillet, scraping up browned bits from bottom.
  • Make it creamy: Add softened cream cheese and whisk until melted and smooth.
  • Finish the sauce: Whisk in heavy cream and remaining ranch seasoning. Simmer 2-3 minutes to thicken.
  • Combine and serve: Return chicken to skillet, stir to coat in sauce. Garnish with fresh herbs and serve immediately.

Notes

Use room temperature cream cheese for lump-free sauce. Don't overcrowd pan when searing chicken. Can substitute chicken thighs for breasts. For gluten-free version, check ranch seasoning label. Sauce can be thickened with cornstarch slurry if needed.
