  • For the Bread: 1/2 cup butter, softened n 2/3 cup white sugar n 2 large eggs n 1 1/2 teaspoons vanilla extract n 1 1/2 cups all-purpose flour n 1 3/4 teaspoons baking powder n 1/2 cup milk n For the Apple-Cinnamon Swirl: 2 medium apples, peeled and chopped n 1/3 cup light brown sugar n 2 teaspoons ground cinnamon n For the Cinnamon Sugar Layer: 1/3 cup light brown sugar n 2 teaspoons ground cinnamon n For the Glaze: 1 cup powdered sugar n 2-3 tablespoons milk or cream n 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan. n Prepare apple-cinnamon swirl by mixing chopped apples with 1/3 cup brown sugar and 2 teaspoons cinnamon. Set aside. n Make cinnamon sugar layer by combining 1/3 cup brown sugar and 2 teaspoons cinnamon in separate bowl. n In large bowl, cream together softened butter and 2/3 cup white sugar until light and fluffy (2-3 minutes). n Beat in eggs one at a time, then stir in vanilla extract. n In separate bowl, whisk together flour and baking powder. n Add flour mixture to wet ingredients alternately with milk, beginning and ending with flour. Mix until just combined. n Pour half of batter into prepared loaf pan. Top with half of apple-cinnamon swirl mixture. n Sprinkle with half of cinnamon-sugar mixture. n Spoon remaining batter over top. Add remaining apples and cinnamon-sugar. n Use knife to gently swirl layers together with figure-eight motions. n Bake for 50-60 minutes until toothpick inserted in center comes out clean. n Cool in pan for 20 minutes before transferring to wire rack.

Notes

Use softened butter for best texture n Do not overmix batter once flour is added n Be gentle when swirling layers to maintain ribbons n Let bread cool completely before adding glaze n Can substitute half all-purpose flour with whole wheat flour n Can use Granny Smith, Honeycrisp, or Fuji apples n Can add 1/2 cup chopped walnuts or pecans n Glaze is optional but recommended n Store covered at room temperature for 2 days or freeze for 3 months
