2 large Sweet Potatoes, peeled and diced into ½-inch cubes
2 tablespoons Olive Oil
½ medium Red Onion, finely chopped
23 Garlic Cloves, minced
1 medium Bell Pepper, diced
8 oz Cooked Breakfast Sausage, crumbled
1 teaspoon Smoked Paprika
½ teaspoon Cumin Powder
½ teaspoon Chili Powder
2 tablespoons Fresh Parsley, chopped
½ teaspoon Salt
¼ teaspoon Black Pepper
Optional: 2-4 Eggs, fried or poached
Optional: ½ Avocado, sliced
Optional: Hot Sauce, to taste


Instructions

  1. Begin by peeling and dicing the sweet potatoes into uniform ½-inch cubes. Chop the red onion and bell pepper, and mince the garlic
  2. Heat a large skillet or cast iron pan over medium-high heat, add the olive oil, and then the sweet potatoes. Cook undisturbed for 5-7 minutes until they start to soften and caramelize, then stir for an additional 5-7 minutes
  3. Push the sweet potatoes to one side, add the red onion and bell pepper to the other side, and sauté for 3-4 minutes. Add the minced garlic and cook for another minute until fragrant
  4. Crumble the cooked breakfast sausage into the skillet and sprinkle in the spices. Stir everything together and cook for another 3-5 minutes
  5. Season with salt and pepper, and stir in the fresh parsley just before serving. Serve immediately topped with optional eggs and avocado

Notes

For best browning, do not overcrowd the pan when cooking the sweet potatoes.
