Description
Sweet Chili Chicken is a quick, flavorful stir-fry with juicy chicken, garlic, ginger, and a sticky sweet chili glaze that’s perfect over rice or noodles.
Ingredients
1.5 lb boneless, skinless chicken thighs or breasts, cut in 1-inch pieces
3 tbsp cornstarch
2–3 tbsp neutral oil
3 cloves garlic, minced
1 tbsp ginger, minced
1/2 cup Thai sweet chili sauce
2 tbsp soy sauce
1 tbsp rice vinegar or lime juice
1/4–1/2 tsp red pepper flakes (optional)
Green onions and sesame seeds, for garnish
Instructions
1. Cut chicken into 1-inch cubes, season lightly, and coat with cornstarch.
2. In a bowl, whisk sweet chili sauce, soy sauce, and rice vinegar or lime juice.
3. Heat oil in a skillet over medium-high. Sear chicken in batches until golden and cooked through. Remove to a plate.
4. Add garlic and ginger to the skillet; cook until fragrant, 30 seconds.
5. Return chicken to pan, pour in sauce, and toss until glossy and thick, 30–60 seconds.
6. Garnish with green onions and sesame seeds. Serve hot over rice or noodles.
Notes
Coat chicken evenly in cornstarch for crisp edges.
Cook in batches to avoid steaming and ensure browning.
Toss in sauce at the very end to preserve crispiness.
Adjust sauce with lime for tang or honey for sweetness.
Air fry coated chicken at 400°F for 12–14 minutes, then toss in warmed sauce.
