Ingredients

1 tablespoon Olive Oil
1 pound Lean Ground Beef
1 medium Yellow Onio
3 cloves Garlic
2 medium Sweet Potatoes
½ cup Chicken Broth
14.5 ounces Canned Diced Tomatoes
15 ounces Canned Black Beans
1 cup Cor
1 tablespoon Chili Powder
1 teaspoon Cumi
1 teaspoon Smoked Paprika
½ teaspoon Salt
¼ teaspoon Black Pepper
¼ cup Fresh Cilantro
1 medium Avocado
1 whole Lime


Instructions

  1. Prep your ingredients by peeling and dicing the sweet potatoes, dicing the onion, and mincing the garlic
  2. Heat olive oil in a large skillet over medium-high heat and brown the ground beef for 5-7 minutes
  3. Reduce the heat, add onion and sauté until softened, then add garlic
  4. Stir in sweet potatoes, chili powder, cumin, smoked paprika, salt, and black pepper
  5. Pour in chicken broth and canned tomatoes, simmer for 10-15 minutes
  6. Add black beans and corn, and heat through before serving
  7. Garnish with cilantro, avocado, and lime juice
