Ingredients
1 tablespoon Olive Oil
1 pound Lean Ground Beef
1 medium Yellow Onio
3 cloves Garlic
2 medium Sweet Potatoes
½ cup Chicken Broth
14.5 ounces Canned Diced Tomatoes
15 ounces Canned Black Beans
1 cup Cor
1 tablespoon Chili Powder
1 teaspoon Cumi
1 teaspoon Smoked Paprika
½ teaspoon Salt
¼ teaspoon Black Pepper
¼ cup Fresh Cilantro
1 medium Avocado
1 whole Lime
Instructions
- Prep your ingredients by peeling and dicing the sweet potatoes, dicing the onion, and mincing the garlic
- Heat olive oil in a large skillet over medium-high heat and brown the ground beef for 5-7 minutes
- Reduce the heat, add onion and sauté until softened, then add garlic
- Stir in sweet potatoes, chili powder, cumin, smoked paprika, salt, and black pepper
- Pour in chicken broth and canned tomatoes, simmer for 10-15 minutes
- Add black beans and corn, and heat through before serving
- Garnish with cilantro, avocado, and lime juice
