Ingredients
2.5 lbs Beef Chuck Roast
4 cups Beef Bone Broth
1.5 lbs Yellow Potatoes
4 units Large Carrots
3 units Celery Stalks
1 medium Yellow Onio
4 cloves Garlic minced
2 tablespoons Tomato Paste
1 tablespoon Worcestershire Sauce
2 sprigs Fresh Thyme
2 sprigs Fresh Rosemary
Instructions
- Pat the beef chuck roast dry with paper towels and cut it into 1.5-inch cubes. Season generously with sea salt and black pepper
- Sear the beef in batches in a large skillet until browned on all sides. Transfer to the slow cooker
- Chop the vegetables and place them over the beef in the slow cooker
- Whisk together beef broth, tomato paste, Worcestershire sauce, and minced garlic. Pour over the meat and vegetables
- Add fresh herbs into the mixture
- Cover and cook on low for 8 hours, or on high for 4 to 5 hours
- If desired, thicken the stew with flour or cornstarch 30 minutes before serving
- Taste and adjust seasoning before serving
Notes
For a thicker stew, mix flour with water and add 30 minutes before serving.
Searing the meat is crucial for flavor.
