Ingredients

2.5 lbs Beef Chuck Roast
4 cups Beef Bone Broth
1.5 lbs Yellow Potatoes
4 units Large Carrots
3 units Celery Stalks
1 medium Yellow Onio
4 cloves Garlic minced
2 tablespoons Tomato Paste
1 tablespoon Worcestershire Sauce
2 sprigs Fresh Thyme
2 sprigs Fresh Rosemary


Instructions

  1. Pat the beef chuck roast dry with paper towels and cut it into 1.5-inch cubes. Season generously with sea salt and black pepper
  2. Sear the beef in batches in a large skillet until browned on all sides. Transfer to the slow cooker
  3. Chop the vegetables and place them over the beef in the slow cooker
  4. Whisk together beef broth, tomato paste, Worcestershire sauce, and minced garlic. Pour over the meat and vegetables
  5. Add fresh herbs into the mixture
  6. Cover and cook on low for 8 hours, or on high for 4 to 5 hours
  7. If desired, thicken the stew with flour or cornstarch 30 minutes before serving
  8. Taste and adjust seasoning before serving

Notes

For a thicker stew, mix flour with water and add 30 minutes before serving.

Searing the meat is crucial for flavor.
