Ingredients

1 cup Greek Yogurt or Sour Cream
3/4 cup Pure Maple Syrup or Honey
3 large Pasture-Raised Eggs
2 tsp Pure Vanilla Extract
1 tbsp Fresh Lemon Juice
1.5 cups Almond Flour or Graham Crackers
4 tbsp Grass-Fed Butter


Instructions

  1. Preheat oven to 325°F (165°C) and grease a 9-inch springform pa
  2. Combine crushed graham crackers or almond flour with melted butter and press into the bottom of the pa
  3. Beat cream cheese until smooth, then add maple syrup or honey while whisking
  4. Add Greek yogurt, vanilla extract, and lemon juice, mixing well
  5. Incorporate eggs one at a time without overmixing
  6. Pour batter over the prepared crust and smooth the top
  7. Bake for 45 to 50 minutes until edges are set but center jiggles slightly
  8. Cool in the oven for an hour, then refrigerate for at least 4 hours before serving
