1 cup Greek Yogurt or Sour Cream
3/4 cup Pure Maple Syrup or Honey
3 large Pasture-Raised Eggs
2 tsp Pure Vanilla Extract
1 tbsp Fresh Lemon Juice
1.5 cups Almond Flour or Graham Crackers
4 tbsp Grass-Fed Butter
Instructions
- Preheat oven to 325°F (165°C) and grease a 9-inch springform pa
- Combine crushed graham crackers or almond flour with melted butter and press into the bottom of the pa
- Beat cream cheese until smooth, then add maple syrup or honey while whisking
- Add Greek yogurt, vanilla extract, and lemon juice, mixing well
- Incorporate eggs one at a time without overmixing
- Pour batter over the prepared crust and smooth the top
- Bake for 45 to 50 minutes until edges are set but center jiggles slightly
- Cool in the oven for an hour, then refrigerate for at least 4 hours before serving
