Ingredients
1 lb Salmon Fillets
1/2 lb Large Shrimp

2 large Shallots, finely diced
1.5 cups Heavy Cream or Full-Fat Coconut Milk
1/2 cup Dry White Wine
2 tablespoons Grass-Fed Butter or Ghee
1/4 cup Fresh Parsley, chopped
1/4 cup Fresh Dill, chopped
Sea Salt and Cracked Black Pepper, to taste
1 tablespoon Fresh Lemon Juice
Instructions
- Pat the salmon fillets dry and season with salt and pepper. Sear in a skillet with butter for 3-4 minutes per side, then set aside
- In the same skillet, cook the shrimp until pink, then remove and set aside
- Sauté shallots and garlic in remaining butter until translucent
- Deglaze with wine, scraping up browned bits, and reduce by half
- Add cream and simmer until thickened, then add mussels and steam until opened
- Return salmon and shrimp to skillet, coating in sauce, and heat through
- Stir in lemon juice and herbs, adjusting seasoning as needed
Notes
Ensure mussels are alive before cooking; discard any that do not close when tapped.
For a dairy-free option, use coconut milk. For a lower-fat option, consider cashew cream.
