4 large fillets (68 oz each) Fresh Salmo
1/2 cup Lump Crab Meat
1/2 cup Small Shrimp
4 oz Cream Cheese
3 cloves Garlic
2 tablespoons Fresh Parsley
1 teaspoon Old Bay Seasoning
1 tablespoon Lemon Juice
1/2 teaspoon Smoked Paprika
2 tablespoons Olive Oil


Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil
  2. Pat the salmon fillets dry and cut a horizontal slit into the side of each fillet to create a pocket
  3. In a medium mixing bowl, combine the softened cream cheese, minced garlic, shrimp, crab meat, parsley, and lemon juice
  4. Stir in the Old Bay seasoning and salt until the mixture is uniform and creamy
  5. Spoon the seafood mixture into the pocket of each salmon fillet
  6. Brush the tops of the stuffed fillets with olive oil and sprinkle with smoked paprika and parsley
  7. Place the fillets in the baking dish and bake for 15 to 18 minutes until the salmon flakes easily
  8. Remove from the oven and let rest for 3 minutes before serving

Notes

Chill the stuffing mixture for 20 minutes before filling the salmon to prevent oozing.

Ensure the salmon is at room temperature for even cooking.

Use a digital thermometer to check if the internal temperature reaches 145°F.
