Ingredients
4 (6oz each) Salmon Fillets
1 lb Large Shrimp
3 tbsp Cajun Seasoning
5 large Garlic Cloves
1.5 cups Heavy Cream
1/2 cup Parmesan Cheese
2 cups Baby Spinach
2 tbsp Olive Oil
2 tbsp Butter
1 tbsp Lemon Juice
Instructions
- Pat your salmon and shrimp completely dry with paper towels. Rub two tablespoons of Cajun seasoning over all sides of the salmon and the shrimp
- Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets in the pan, skin-side down. Cook for 4 to 5 minutes until crispy, then flip and cook for another 3 minutes. Remove and set aside
- In the same skillet, melt one tablespoon of butter. Add the shrimp in a single layer. Sear for about 2 minutes per side until pink and opaque. Remove and set aside
- Lower the heat to medium. Add remaining butter and minced garlic to the pan. Sauté for 1 minute. Pour in the heavy cream and remaining Cajun seasoning, bringing to a gentle simmer
- Stir in the freshly grated Parmesan cheese and lemon juice. Whisk until the cheese melts and the sauce thickens slightly. Toss in baby spinach and stir until just wilted
- Nestle the cooked salmon and shrimp back into the skillet with the sauce, spooning the sauce over them to coat thoroughly

Bring the salmon to room temperature before cooking for even cooking.
Avoid crowding the pan while searing to achieve a beautiful crust.
Use a whisk when adding cheese to prevent clumping in the sauce.
