Description
This Pumpkin Swirl Cheesecake combines creamy vanilla cheesecake with a spiced pumpkin layer, creating a delicious dessert that captures the essence of autumn.
Ingredients
1 ½ cups Graham cracker crumbs
¼ cup Granulated sugar
6 tablespoons Unsalted butter, melted
3 (8-ounce) blocks Full-fat cream cheese, softened
1 cup Granulated sugar
2 tablespoons All-purpose flour
1 teaspoon Pure vanilla extract
¼ teaspoon Salt
4 Large eggs, room temperature
½ cup Sour cream, room temperature
1 cup Canned pumpkin puree
¼ cup Packed light brown sugar
1 Large egg, room temperature
1 teaspoon Pumpkin pie spice
½ teaspoon Ground cinnamo
Pinch of Ground cloves
Instructions
- Preheat the oven to 325°F (160°C) and prepare the springform pan with foil for a water bath
- Combine graham cracker crumbs and sugar, then mix in melted butter. Press into the bottom of the springform pan and bake for 8-10 minutes
- Mix pumpkin puree, brown sugar, egg, pumpkin pie spice, cinnamon, and cloves in a bowl until smooth and set aside
- Beat softened cream cheese until smooth, then add sugar and flour. Mix until combined, then add vanilla, salt, and eggs one at a time. Fold in sour cream
- Pour two-thirds of the cheesecake batter into the crust, dollop pumpkin mixture on top, then layer with remaining cheesecake batter. Swirl gently
- Place the springform pan into the roasting pan and fill halfway with hot water. Bake for 60-75 minutes until edges are set and center jiggles
- Let the cheesecake cool in the oven for 1 hour, then cool on a rack for 1-2 hours. Refrigerate for at least 6-8 hours before serving
