Description

This Pumpkin Swirl Cheesecake combines creamy vanilla cheesecake with a spiced pumpkin layer, creating a delicious dessert that captures the essence of autumn.


Ingredients

1 ½ cups Graham cracker crumbs
¼ cup Granulated sugar
6 tablespoons Unsalted butter, melted
3 (8-ounce) blocks Full-fat cream cheese, softened
1 cup Granulated sugar
2 tablespoons All-purpose flour
1 teaspoon Pure vanilla extract
¼ teaspoon Salt
4 Large eggs, room temperature
½ cup Sour cream, room temperature
1 cup Canned pumpkin puree
¼ cup Packed light brown sugar
1 Large egg, room temperature
1 teaspoon Pumpkin pie spice
½ teaspoon Ground cinnamo
Pinch of Ground cloves


Instructions

  1. Preheat the oven to 325°F (160°C) and prepare the springform pan with foil for a water bath
  2. Combine graham cracker crumbs and sugar, then mix in melted butter. Press into the bottom of the springform pan and bake for 8-10 minutes
  3. Mix pumpkin puree, brown sugar, egg, pumpkin pie spice, cinnamon, and cloves in a bowl until smooth and set aside
  4. Beat softened cream cheese until smooth, then add sugar and flour. Mix until combined, then add vanilla, salt, and eggs one at a time. Fold in sour cream
  5. Pour two-thirds of the cheesecake batter into the crust, dollop pumpkin mixture on top, then layer with remaining cheesecake batter. Swirl gently
  6. Place the springform pan into the roasting pan and fill halfway with hot water. Bake for 60-75 minutes until edges are set and center jiggles
  7. Let the cheesecake cool in the oven for 1 hour, then cool on a rack for 1-2 hours. Refrigerate for at least 6-8 hours before serving

Notes

Make sure all ingredients are at room temperature for best results.

Using a water bath is essential to prevent cracks during baking.
