Description

This Potato Soup Creamy and Hearty Slow Cooker Cajun is a delicious and convenient dish that combines the smoky flavor of Andouille sausage with a rich, creamy texture. Perfect for busy professionals, it allows you to enjoy a weeknight dinner with minimal effort. Simply toss the ingredients in the slow cooker and return to a warm, comforting meal.


Ingredients

3 lbs Russet Potatoes
12 oz Andouille Sausage
1 medium Yellow Onio
2 stalks Celery
1 large Green Bell Pepper
4 cloves Garlic
4 cups Chicken Broth
2 tbsp Cajun Seasoning
1 tsp Smoked Paprika
1 cup Heavy Cream
4 oz Cream Cheese
1/4 cup Green Onions


Instructions

  1. Peel and cube the potatoes into uniform pieces and place them in the slow cooker
  2. Add the diced onion, bell pepper, celery, and minced garlic to the pot
  3. Slice the Andouille sausage and optionally sear it in a pan before adding to the crockpot. Sprinkle the Cajun seasoning and smoked paprika over the top
  4. Pour in the chicken broth until the liquid just covers the ingredients
  5. Cover and cook on Low for 7-8 hours or High for 4 hours
  6. Stir in the softened cream cheese and heavy cream. Blend about 1/3 of the soup for a thicker texture
  7. Taste and adjust seasoning if necessary. Let sit on warm for 10 minutes before serving

Notes

For a lighter version, substitute heavy cream with whole milk or coconut milk.

To increase fiber, leave potato skins on.
