Ingredients
3 lbs Russet Potatoes
12 oz Andouille Sausage
1 medium Yellow Onio
2 stalks Celery
1 large Green Bell Pepper
4 cloves Garlic
4 cups Chicken Broth
2 tbsp Cajun Seasoning
1 tsp Smoked Paprika
1 cup Heavy Cream
4 oz Cream Cheese
1/4 cup Green Onions
Instructions
- Peel and cube the potatoes into uniform pieces and place them in the slow cooker
- Add the diced onion, bell pepper, celery, and minced garlic to the pot
- Slice the Andouille sausage and optionally sear it in a pan before adding to the crockpot. Sprinkle the Cajun seasoning and smoked paprika over the top
- Pour in the chicken broth until the liquid just covers the ingredients
- Cover and cook on Low for 7-8 hours or High for 4 hours
- Stir in the softened cream cheese and heavy cream. Blend about 1/3 of the soup for a thicker texture
- Taste and adjust seasoning if necessary. Let sit on warm for 10 minutes before serving
Notes
For a lighter version, substitute heavy cream with whole milk or coconut milk.
To increase fiber, leave potato skins on.
