Description
Potato Sausage Chowder is a creamy, hearty, and quick one-pot meal made with smoked sausage, tender potatoes, and sweet corn. This comforting chowder comes together in under 30 minutes, making it the perfect easy weeknight dinner that tastes like it simmered all day.
Ingredients
1 lb smoked sausage, sliced
4 cups diced potatoes (frozen or fresh)
1 onion, diced (or 1 tbsp onion powder)
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 cup frozen corn
1 tsp paprika
Salt and black pepper, to taste
Instructions
1. Slice sausage into rounds and brown in a large pot over medium heat for 5 minutes. Remove and set aside.
2. In the same pot, sauté onion and garlic for 3 minutes until fragrant.
3. Add diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer for 15 minutes until potatoes are tender.
4. Return sausage to the pot along with corn and paprika. Stir and cook 5 more minutes.
5. Pour in heavy cream. Heat through gently without boiling.
6. Season with salt and pepper to taste. Serve warm and enjoy.
Notes
Use pre-cooked smoked sausage for maximum convenience.
Frozen diced potatoes save time—no peeling or chopping needed.
For lighter chowder, substitute half-and-half or milk for cream.
Mash some potatoes for a thicker texture.
Not recommended for freezing due to dairy separation.
