Description

These Pizza Enchiladas offer the perfect fusion of gooey melted cheese, savory pepperoni, and the satisfying structure of a rolled tortilla, perfect for busy professionals craving a hearty, homemade meal.


Ingredients

8 large Flour Tortillas
2 cups Pizza Sauce or Marinara
3 cups Shredded Mozzarella Cheese
6 ounces Pepperoni Slices
1/2 pound Cooked Italian Sausage
1/2 cup Green Bell Pepper, diced finely
1/4 cup Red Onion, minced
1 teaspoon Italian Seasoning
1 tablespoon Fresh Basil, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish and spread about 1/2 cup of pizza sauce on the bottom
  2. In a medium bowl, mix together cooked Italian sausage, half the pepperoni, diced bell peppers, and 1 cup of mozzarella cheese. Add a splash of pizza sauce to bind
  3. Lay a tortilla flat, place a scoop of filling in the center, roll tightly, and place seam-side down in the baking dish. Repeat with all tortillas
  4. Pour remaining pizza sauce over the top, sprinkle with 2 cups of mozzarella cheese, arrange remaining pepperoni on top, and sprinkle Italian seasoning
  5. Bake for 15 to 20 minutes until cheese is bubbly and golden brow

Notes

Use freshly grated mozzarella for better melting.

Warm tortillas for 15 seconds in the microwave to prevent cracking.

Allow the enchiladas to rest for 5 minutes after baking before serving.
