Ingredients
2 Organic Yellow Onions
1 Red Onio
1 tablespoon Freshly Cracked Black Peppercorns
2 tablespoons Grass-Fed Ghee or Avocado Oil
4 cups Organic Bone Broth or Vegetable Stock
2 sprigs Fresh Thyme
2 Bay Leaves
1 teaspoon Sea Salt
2 cloves Garlic
Instructions
- Slice your yellow and red onions into thin, uniform half-moons
- Melt the ghee in a large heavy-bottomed pot over medium heat. Add the onions and a pinch of salt
- Reduce the heat to medium-low and stir the onions occasionally for 30 to 45 minutes until they reach a deep golden-brown hue
- Stir in the garlic and a generous tablespoon of freshly cracked black peppercorns
- Pour in a small amount of broth to scrape up the browned bits from the bottom of the pot
- Add the remaining broth, thyme, and bay leaves. Bring to a gentle boil, then reduce heat and let it simmer for 20 minutes
- Taste and adjust seasoning if needed, then remove bay leaves before serving
Notes
Use a heavy-bottomed pot like a Dutch oven for even heat distribution.
Avoid pre-ground pepper to ensure freshness.
