Description

This Mexican Meatloaf is a zesty twist on the traditional comfort food, featuring smoky chipotle, fresh vegetables, and spices for a moist and flavorful dish that turns an ordinary meal into a Latin celebration.

2 lbs Lean Ground Beef
1 cup Chunky Salsa
3/4 cup Breadcrumbs
2 large Eggs
1/2 cup Frozen Cor
1/2 cup Frozen Black Beans
1/2 cup Bell Pepper, diced
1/2 cup Onion, diced
1 tbsp Chili Powder
1 tbsp Cumi
1/4 cup Fresh Cilantro, chopped


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan or baking sheet
  2. Sauté diced onions and bell peppers in olive oil until soft
  3. In a mixing bowl, whisk together eggs, salsa, chili powder, cumin, smoked paprika, and salt
  4. Add ground beef, sautéed vegetables, corn, black beans, and breadcrumbs. Mix gently
  5. Transfer mixture to the pan or shape into a loaf on a baking sheet and smooth the top
  6. Bake for 45 minutes, then optionally add a glaze and bake for another 10-15 minutes until done
  7. Let the loaf rest for 10 minutes before slicing

Notes

For a dairy-free option, ensure breadcrumbs are free of milk solids.

To prevent crumbling, let the loaf rest after baking.
