Ingredients
2 lbs Lean Ground Beef
1 cup Chunky Salsa
3/4 cup Breadcrumbs
2 large Eggs
1/2 cup Frozen Cor
1/2 cup Frozen Black Beans
1/2 cup Bell Pepper, diced
1/2 cup Onion, diced
1 tbsp Chili Powder
1 tbsp Cumi
1/4 cup Fresh Cilantro, chopped
Instructions
- Preheat your oven to 375°F (190°C) and prepare a loaf pan or baking sheet
- Sauté diced onions and bell peppers in olive oil until soft
- In a mixing bowl, whisk together eggs, salsa, chili powder, cumin, smoked paprika, and salt
- Add ground beef, sautéed vegetables, corn, black beans, and breadcrumbs. Mix gently
- Transfer mixture to the pan or shape into a loaf on a baking sheet and smooth the top
- Bake for 45 minutes, then optionally add a glaze and bake for another 10-15 minutes until done
- Let the loaf rest for 10 minutes before slicing
