Ingredients
3–4 large Sweet Potatoes
1/4 cup Honey
2 tablespoons Olive Oil
1 teaspoon Ground Cinnamo
1/2 teaspoon Ground Nutmeg
1/2 teaspoon Smoked Paprika
1/4 teaspoon Cayenne Pepper
1/2 teaspoon Sea Salt
1/4 teaspoon Black Pepper
2 tablespoons Fresh Parsley or Cilantro
Instructions
- Preheat the oven to 400°F (200°C)
- Wash and dice the sweet potatoes into 1-inch cubes
- In a large bowl, whisk together honey, olive oil, cinnamon, nutmeg, smoked paprika, cayenne pepper (if using), sea salt, and black pepper
- Add the sweet potatoes to the bowl and coat them evenly with the honey mixture
- Spread the coated sweet potatoes in a single layer on a baking sheet
- Roast in the oven for 20-25 minutes, toss them, and then continue roasting for an additional 15-20 minutes until fork-tender and caramelized
- Remove from the oven, garnish with fresh parsley or cilantro, and serve immediately
