Ingredients
1 cup warm whole milk (about 110ยฐF)
1/3 cup granulated sugar
2 1/4 tsp active dry yeast (one packet)
1/2 cup unsalted butter, melted (plus extra for brushing)
1 large egg, room temperature
1 tsp salt
4 cups all-purpose flour (may need slightly more or less)
Instructions
1. Activate the yeast by combining warm milk, sugar, and yeast in a bowl. Let sit 5-10 minutes until foamy.
2. Add melted butter, egg, and salt. Mix with a dough hook on low speed, gradually adding flour until soft dough forms.
3. Knead dough on medium speed for 5-7 minutes, or by hand 8-10 minutes, until smooth and elastic.
4. Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place 1-2 hours until doubled.
5. Punch dough down, turn onto floured surface, divide into 12 pieces, shape into balls.
6. Place dough balls in greased 9×13 inch pan, cover, and let rise 30-45 minutes until puffy.
7. Preheat oven to 375ยฐF (190ยฐC) and bake rolls 18-22 minutes until golden brown.
8. Brush hot rolls with melted butter immediately and serve warm.
Notes
Use warm, not hot, milk to avoid killing the yeast.
Do not rush rising times; slow rise develops better flavor.
For a soft crust, place a pan of hot water in the oven while baking.
Tap tops of rolls to test doneness; hollow sound indicates ready.
Cool rolls briefly before serving to make them easier to pull apart.
Store leftovers in airtight container at room temperature up to 2 days or freeze up to 3 months.
