3 tbsp Extra Virgin Olive Oil
4 tbsp Unsalted Grass-Fed Butter
6 cloves Fresh Garlic (Minced)
1/2 cup Dry White Wine (Pinot Grigio)
2 tbsp Fresh Lemon Juice
1/2 tsp Red Pepper Flakes
1/4 cup Fresh Italian Parsley
2 tbsp Fresh Basil (Chiffonade)
Sea Salt & Black Pepper (To taste)


Instructions

  1. Prep the shrimp by peeling and deveining, leaving tails on for presentatio
  2. Infuse the oil in a skillet over medium-high heat, and sear shrimp for 60 seconds per side before removing
  3. Lower heat, add butter, garlic and red pepper flakes and sauté without browning the garlic
  4. Deglaze the pan with white wine and reduce by half
  5. Emulsify the sauce by whisking in cold butter, one tablespoon at a time
  6. Recombine shrimp with the sauce and add lemon juice, cooking for an additional minute
  7. Stir in fresh parsley and basil at the end

Notes

Use cold butter for emulsification and do not overcook the shrimp.
