Ingredients
1.5 lbs Large Shrimp (16–20 count)
3 tbsp Extra Virgin Olive Oil
4 tbsp Unsalted Grass-Fed Butter
6 cloves Fresh Garlic (Minced)
1/2 cup Dry White Wine (Pinot Grigio)
2 tbsp Fresh Lemon Juice
1/2 tsp Red Pepper Flakes
1/4 cup Fresh Italian Parsley
2 tbsp Fresh Basil (Chiffonade)
Sea Salt & Black Pepper (To taste)
Instructions
- Prep the shrimp by peeling and deveining, leaving tails on for presentatio
- Infuse the oil in a skillet over medium-high heat, and sear shrimp for 60 seconds per side before removing
- Lower heat, add butter, garlic and red pepper flakes and sauté without browning the garlic
- Deglaze the pan with white wine and reduce by half
- Emulsify the sauce by whisking in cold butter, one tablespoon at a time
- Recombine shrimp with the sauce and add lemon juice, cooking for an additional minute
- Stir in fresh parsley and basil at the end
Notes
Use cold butter for emulsification and do not overcook the shrimp.
