Description

This Herb Pasta Salad captures the essence of fresh ingredients by combining pasta with vibrant herbs and a zesty lemon dressing, offering a delightful blend of flavors and textures.


Ingredients

16 oz Fusilli, Rotini, or Farfalle pasta
1 cup fresh basil
1/2 cup flat-leaf parsley
1/4 cup fresh dill
2 tablespoons chives
1/2 cup Extra Virgin Olive Oil
1/4 cup fresh lemon juice
2 cloves minced garlic
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1/2 teaspoon red pepper flakes
1 cup halved cherry tomatoes
1/2 cup English cucumber, diced
1/2 cup crumbled feta or shaved parmesan (optional)


Instructions

  1. Bring a large pot of heavily salted water to a rolling boil
  2. Cook the pasta according to the package instructions until al dente
  3. While the pasta cooks, finely chop your fresh basil, parsley, dill, and chives
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and red pepper flakes until emulsified
  5. Drain the pasta and rinse it briefly under cold water
  6. In a large mixing bowl, combine the cooled pasta, chopped herbs, cherry tomatoes, and cucumbers. Pour the dressing over the top and toss gently
  7. Taste and adjust seasoning if necessary, and let the salad sit for at least 15 minutes before serving

Notes

Allow the salad to chill in the refrigerator for deeper flavor infusion, and add fresh basil just before serving.
