Description

This Ground Beef and Potatoes Skillet is a comforting, hearty meal made with seared beef crumbles and crispy potato cubes, all cooked in one pan in just thirty minutes. It’s filled with savory flavors and can be easily customized to your taste.

Ingredients

Scale

1 lb Ground Beef
1.5 lbs Yukon Gold Potatoes
1 medium Yellow Onio
1 large Bell Pepper
3 cloves Garlic
2 tbsp Olive Oil
1 tsp Smoked Paprika
Salt and Black Pepper to taste
1/4 cup Beef Broth
1/2 cup Shredded Cheddar (optional)

Instructions

  1. Prep the Vegetables: Wash and dice the potatoes into uniform 1/2-inch cubes. Finely dice the onion and bell pepper, and mince the garlic
  2. Sear the Potatoes: Heat the olive oil in a large skillet over medium-high heat. Add the potato cubes in a single layer, cooking undisturbed for 4-5 minutes. Stir occasionally until about 80% tender, then remove from the pa
  3. Brown the Beef: In the same skillet, add the ground beef, cooking until no longer pink. Drain excess grease, leaving one tablespoo
  4. Aromatics and Peppers: Add diced onions and bell peppers, sautéing for 3-4 minutes until onions are translucent. Stir in minced garlic for another 60 seconds
  5. Combine and Season: Return potatoes to the skillet. Sprinkle with smoked paprika, salt, and pepper, stirring to coat
  6. Simmer to Perfection: Pour in beef broth, cover, and simmer on medium-low for 5-7 minutes until potatoes are fork-tender
  7. The Cheesy Finish: Remove lid, sprinkle cheese over the top if using, cover for one more minute until melted. Garnish with parsley or green onions before serving

Notes

Always pat diced potatoes dry before cooking to avoid mushiness.

Use a large enough skillet to prevent steaming.

Let the skillet rest for a few minutes after cooking for best flavors.
