Description
Grilled Fish Jerk Shrimp and Pineapple Skewers are a vibrant and flavorful dish that combines flaky fish, succulent shrimp, and sweet pineapple, all coated in aromatic jerk seasoning, perfect for any occasion.
Ingredients
1.5 lbs Mahi Mahi or Snapper Fillets, cut into 1.5-inch thick cubes
1 lb Jumbo Shrimp, peeled and deveined, tail-o
1 large Fresh Pineapple, peeled, cored, and cut into chunks
1/2 cup Jerk Seasoning Paste
1 large Red Onion, cut into large wedges
2 large Bell Peppers, cut into 1.5-inch squares
3 tablespoons Fresh Lime Juice
2 tablespoons Olive Oil
1/4 cup Fresh Cilantro, chopped
Instructions
- In a large mixing bowl, combine the jerk seasoning paste, lime juice, and a splash of olive oil. Whisk until smooth
- Add the cubed fish and cleaned shrimp to the bowl. Gently toss to coat and refrigerate for at least 30 minutes
- Chop the red onion, bell peppers, and pineapple into uniform chunks
- Soak wooden skewers in water for 20 minutes. Thread fish, shrimp, pineapple, onion, and peppers onto the skewers
- Preheat grill to medium-high heat. Clean grates and lightly oil
- Place skewers on grill, cooking for 3-4 minutes per side until shrimp is pink and fish flakes easily
- Remove from heat, let rest for a couple of minutes, garnish with cilantro and serve
Notes
Ensure seafood is dry before marinating to prevent dilution of spices.
Use two parallel skewers for each row to prevent ingredients from spinning.
