Rich and savory French Onion Soup made in a slow cooker, featuring caramelized onions, beef broth, and melted Gruyere cheese.
Ingredients
3 large Yellow Onions
2 large Red Onions
4 tablespoons Unsalted Butter
6 cups Beef Bone Broth
1/2 cup Dry Sherry or White Wine
4 sprigs Fresh Thyme
1 tablespoon Worcestershire Sauce
1 Baguette Slice per bowl
1.5 cups Gruyere Cheese, shredded
Instructions
- Slice your yellow and red onions into thin, uniform half-moons
- Place the sliced onions into the bottom of the slow cooker. Top with butter, salt, and a pinch of sugar
- Cover and cook on LOW for 8 to 10 hours
- Pour in the beef bone broth, sherry, Worcestershire sauce, and tuck in the thyme sprigs. Stir gently
- Cover again and cook on HIGH for another 1 to 2 hours
- Slice and toast the baguette rounds in the oven until crisp
- Ladle the soup into oven-safe crocks. Top with a toasted bread slice and shredded Gruyere, then broil for 2-3 minutes
Notes
Use low-sodium broth for better control of seasoning.
