Ingredients

2 English Cucumbers
1 cup Cherry Tomatoes
1 small Red Onio
1/2 cup Kalamata Olives
1 Bell Pepper
100 g Feta Cheese
1 cup Greek Yogurt
2 tbsp Extra Virgin Olive Oil
2 tbsp Fresh Lemon Juice
1 tsp Dried Oregano
1 clove Garlic


Instructions

  1. Wash all produce thoroughly and slice cucumbers into half-moons and halve the cherry tomatoes
  2. Thinly slice the red onion and dice the bell peppers. Combine these in a large bowl with the olives
  3. In a jar, combine Greek yogurt, olive oil, lemon juice, minced garlic, and oregano. Shake until smooth
  4. Pour the dressing over the vegetables and gently fold to combine
  5. Crumble feta cheese over the top and avoid over-mixing
  6. Chill in the refrigerator for 10 minutes before serving

If using raw onions, soak them in ice water for 10 minutes to reduce sharpness.
