These Chicken Burrito Bowls encapsulate a region’s spirit with tender, spice-kissed chicken, fluffy rice, hearty beans, sweet corn, and creamy avocado, all brightened with a zesty lime dressing.
Ingredients
1.5 lbs Boneless, Skinless Chicken Breasts or Thighs
2 tbsp Olive Oil
1 cup White Rice
1 can (15 oz) Black Beans
1 can (15 oz) Cor
1/2 Red Onion, finely diced
1 Bell Pepper, diced
2 Avocados, diced
1/2 cup Salsa
1/4 cup Cilantro, chopped
2 tbsp Lime Juice
1 tsp Cumi
1 tsp Chili Powder
1/2 tsp Smoked Paprika
1/2 tsp Garlic Powder
Salt & Black Pepper to taste
Optional: 1/2 cup Shredded Cheese
Optional: Greek Yogurt or Sour Cream
Instructions
- Prepare the Chicken: In a medium bowl, toss the cubed chicken with olive oil, cumin, chili powder, smoked paprika, garlic powder, salt, and pepper
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes until golden brown and cooked through
- Cook the Rice: Prepare the rice according to package instructions
- Sauté Vegetables (Optional): In the same skillet, sauté diced bell peppers and red onion in olive oil for 3-5 minutes until slightly softened
- Combine Beans and Corn: Warm the rinsed black beans and corn in a saucepa
- Prepare Avocado: Dice avocados just before assembling
- Make the Lime Dressing: Whisk together lime juice, chopped cilantro, salt and pepper
- Assemble the Chicken Burrito Bowls: Divide the rice among serving bowls and top with chicken, beans, corn, avocado, sautéed vegetables, and salsa
- Drizzle and Serve: Drizzle lime-cilantro dressing over each bowl and serve immediately
