Instructions

  1. Preheat your oven to 350°F (175°C). Mix the graham cracker crumbs and melted butter in a medium bowl. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool completely
  2. In a large mixing bowl, beat the softened cream cheese and sugar on medium speed until completely smooth (about 3 to 5 minutes)
  3. Mix in the sour cream, vanilla extract, and lemon juice. Continue beating until fully incorporated. Sift in the flour and mix on low speed until combined
  4. Add the eggs one at a time, beating on low speed after each addition just until the yellow disappears
  5. Wrap the outside of the springform pan with heavy-duty aluminum foil to prevent leaks. Place the pan inside a larger roasting pa
  6. Pour the batter over the cooled crust. Carefully pour boiling water into the roasting pan until it reaches halfway up the sides of the springform pan. Bake at 325°F (160°C) for 75 to 90 minutes
  7. Turn off the oven when the edges are set but the center jiggles slightly. Crack the oven door open and let the cheesecake sit inside for one hour
  8. Remove the pan from the water bath and take off the foil. Let it cool to room temperature, then refrigerate for at least 8 hours, or ideally overnight
