3 large heads Romaine Lettuce Hearts
1/2 cup Parmigiano-Reggiano (Grated)
1/2 cup Extra Virgin Olive Oil
1 large Egg Yolk
2 cloves Fresh Garlic Cloves
2 tablespoons Fresh Lemon Juice
1 teaspoon Dijon Mustard
1/2 teaspoon Anchovy Paste (Optional)
1 cup Homemade Croutons
Salt and Black Pepper To taste


Instructions

  1. Wash the romaine hearts thoroughly and pat them dry. Chop the leaves into bite-sized pieces and place them in a large chilled bowl
  2. Mince the garlic cloves finely and mash them with a pinch of salt until it forms a smooth paste
  3. In a small bowl, whisk together the egg yolk, lemon juice, Dijon mustard, and anchovy paste. Slowly drizzle in the olive oil while whisking until the dressing becomes thick and creamy
  4. Toss cubed bread with olive oil and garlic powder. Bake at 375°F for 8-10 minutes until golden brow
  5. Pour the dressing over the chopped romaine. Add the grated cheese and warm croutons, tossing gently to coat
  6. Taste and add extra seasoning if needed. Serve immediately

Notes

Use a wooden bowl for better flavor and texture.

Ensure lettuce is bone-dry before tossing with dressing.
