3 large heads Romaine Lettuce Hearts
1/2 cup Parmigiano-Reggiano (Grated)
1/2 cup Extra Virgin Olive Oil
1 large Egg Yolk
2 cloves Fresh Garlic Cloves

1 teaspoon Dijon Mustard
1/2 teaspoon Anchovy Paste (Optional)
1 cup Homemade Croutons

Instructions
- Wash the romaine hearts thoroughly and pat them dry. Chop the leaves into bite-sized pieces and place them in a large chilled bowl
- Mince the garlic cloves finely and mash them with a pinch of salt until it forms a smooth paste
- In a small bowl, whisk together the egg yolk, lemon juice, Dijon mustard, and anchovy paste. Slowly drizzle in the olive oil while whisking until the dressing becomes thick and creamy
- Toss cubed bread with olive oil and garlic powder. Bake at 375°F for 8-10 minutes until golden brow
- Pour the dressing over the chopped romaine. Add the grated cheese and warm croutons, tossing gently to coat
- Taste and add extra seasoning if needed. Serve immediately
