Description

This Caesar Salad Grilled Shrimp Pasta Salad is a vibrant, smoky, and creamy masterpiece that captures the essence of summer in every bite, featuring charred shrimp and al dente pasta in a rich dressing.


Ingredients

1 lb Large Shrimp (peeled and deveined)
12 oz Fusilli or Penne Pasta
4 cups Romaine Lettuce (chopped)
1/2 cup Shaved Parmesan Cheese
1 cup Creamy Caesar Dressing (homemade or premium)
To taste Smoked Paprika
To taste Garlic Powder
To taste Salt
To taste Pepper
1 cup Garlic Herb Croutons
2 units Fresh Lemon Wedges


Instructions

  1. Bring a large pot of salted water to a rolling boil. Cook your pasta according to the package instructions until it reaches al dente texture. Drain and rinse under cool water, then set in a large mixing bowl
  2. In a medium bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper. Let marinate for about ten minutes
  3. Preheat your grill, then thread the shrimp onto skewers or use a grill basket. Grill over medium-high heat for 2-3 minutes per side until opaque and charred. Remove and squeeze fresh lemon juice over them
  4. Wash and dry the Romaine lettuce, then chop into bite-sized ribbons
  5. Add the cooked pasta and chopped Romaine to the mixing bowl. Pour the Caesar dressing over and toss gently to coat
  6. Fold in the grilled shrimp, being careful not to break the pasta. Top with shaved Parmesan and croutons. Serve with extra lemon wedges

Notes

For gluten-free, replace pasta with chickpea or brown rice pasta.

To lighten, use a lemon-tahini dressing instead of creamy dressing.
