Ingredients
1 lb Large Shrimp (peeled and deveined)
12 oz Fusilli or Penne Pasta
4 cups Romaine Lettuce (chopped)
1/2 cup Shaved Parmesan Cheese
1 cup Creamy Caesar Dressing (homemade or premium)
To taste Smoked Paprika
To taste Garlic Powder
To taste Salt
To taste Pepper
1 cup Garlic Herb Croutons
2 units Fresh Lemon Wedges
Instructions
- Bring a large pot of salted water to a rolling boil. Cook your pasta according to the package instructions until it reaches al dente texture. Drain and rinse under cool water, then set in a large mixing bowl
- In a medium bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper. Let marinate for about ten minutes
- Preheat your grill, then thread the shrimp onto skewers or use a grill basket. Grill over medium-high heat for 2-3 minutes per side until opaque and charred. Remove and squeeze fresh lemon juice over them
- Wash and dry the Romaine lettuce, then chop into bite-sized ribbons
- Add the cooked pasta and chopped Romaine to the mixing bowl. Pour the Caesar dressing over and toss gently to coat
- Fold in the grilled shrimp, being careful not to break the pasta. Top with shaved Parmesan and croutons. Serve with extra lemon wedges
Notes
For gluten-free, replace pasta with chickpea or brown rice pasta.
To lighten, use a lemon-tahini dressing instead of creamy dressing.
