Ingredients
2 tbsp Unsalted Butter
1 cup Yellow Onion, finely diced
2 cloves Garlic, minced
1/4 cup All-Purpose Flour
4 cups Chicken Broth (low sodium)
2 cups Whole Milk
4 cups Broccoli Florets, roughly chopped
8 oz Sharp Cheddar Cheese, freshly grated
1/2 tsp Dijon Mustard
1/4 tsp Nutmeg, freshly grated
To taste Salt and Freshly Ground Black Pepper
Instructions
- In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and sauté until softened and translucent, about 6-8 minutes
- Add the minced garlic and sauté for another minute until fragrant
- Sprinkle in the flour, stirring continuously for 1-2 minutes to form a roux
- Gradually whisk in the chicken broth, one cup at a time, until smooth. Then whisk in the milk
- Bring the mixture to a gentle simmer and cook for 10-15 minutes until thickened
- Stir in the broccoli florets and simmer for 5-7 minutes until tender-crisp
- Reduce heat to low, then add the cheddar cheese, Dijon mustard, and nutmeg. Stir until the cheese is melted and creamy
- Season with salt and pepper to taste. Serve hot

For a gluten-free option, use gluten-free all-purpose flour.
