2 tbsp Unsalted Butter
1 cup Yellow Onion, finely diced
2 cloves Garlic, minced
1/4 cup All-Purpose Flour
4 cups Chicken Broth (low sodium)
2 cups Whole Milk
4 cups Broccoli Florets, roughly chopped
8 oz Sharp Cheddar Cheese, freshly grated
1/2 tsp Dijon Mustard
1/4 tsp Nutmeg, freshly grated
To taste Salt and Freshly Ground Black Pepper


Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and sauté until softened and translucent, about 6-8 minutes
  2. Add the minced garlic and sauté for another minute until fragrant
  3. Sprinkle in the flour, stirring continuously for 1-2 minutes to form a roux
  4. Gradually whisk in the chicken broth, one cup at a time, until smooth. Then whisk in the milk
  5. Bring the mixture to a gentle simmer and cook for 10-15 minutes until thickened
  6. Stir in the broccoli florets and simmer for 5-7 minutes until tender-crisp
  7. Reduce heat to low, then add the cheddar cheese, Dijon mustard, and nutmeg. Stir until the cheese is melted and creamy
  8. Season with salt and pepper to taste. Serve hot

Notes

For a gluten-free option, use gluten-free all-purpose flour.

You can substitute chicken broth with vegetable broth for a vegetarian version.
