2 1/4 tsp Active Dry Yeast
1 cup Mashed Overripe Bananas (about 23 bananas)

1/4 cup Granulated Sugar or Coconut Sugar
1 Large Egg (room temperature)
3 1/2 to 4 cups All-Purpose Flour (or Bread Flour)
1/2 tsp Sea Salt
1/2 cup Unsalted Butter (softened)
3/4 cup Brown Sugar
2 tbsp Ground Cinnamo
1/2 cup Chopped Walnuts or Pecans (optional)
4 oz Cream Cheese (softened)
1 cup Powdered Sugar
1 tsp Vanilla Extract


Instructions

  1. Activate the yeast by whisking it into the warm milk with a tablespoon of sugar. Let it sit for about 5 to 10 minutes until it becomes foamy
  2. In a large mixing bowl, combine the mashed bananas, melted butter, remaining sugar, egg, and salt. Stir until the mixture looks smooth
  3. Pour the yeast mixture into the banana mixture and stir well. Gradually add the flour, one cup at a time, until a soft dough forms
  4. Knead the dough on a lightly floured surface for 5 to 7 minutes. The dough should be slightly tacky but not sticky
  5. Place the dough in a greased bowl, cover it with a warm damp cloth, and let it rise in a warm spot for about 1 to 1.5 hours until it doubles in size
  6. While the dough rises, mix the softened butter, brown sugar, and cinnamon in a small bowl to create the filling
  7. Punch down the risen dough and roll it out into a large rectangle (about 12×18 inches) on a floured surface
  8. Spread the cinnamon filling evenly over the dough, leaving a small border at the edges. Sprinkle with nuts if you are using them
  9. Roll the dough tightly into a log, starting from the long edge. Cut the log into 12 even pieces
  10. Place the rolls into a greased 9×13 inch baking pan. Cover them and let them rise again for another 30 to 45 minutes
  11. Preheat your oven to 350°F (175°C). Bake the Banana Bread Cinnamon Rolls for 25 to 30 minutes until golden brow
